Tray Service
Everything at Via Carota moves on our antique silver trays – food, coffee, cocktails, wine, and beer. Tables should always be cleared with a tray in hand (never set a tray on the table while clearing). Used glasses are always carried on a tray, never by hand. We all contribute to the flow of service by moving used glassware and dishes from the end of the bar to the kitchen, always on a tray.
Please ask a manager for guidance and help practicing if you are unfamiliar with tray service.
